If you remember Christopher and I went peach picking at Schnepffs Farm a few weeks ago.
I decided with all of the beautiful peaches I would make peach apple pie. I hope you like it !
4 cups of peaches
1 cup granny smith apples
1 package of pre made pie crust (contains 2 pie crusts)
1 Tablespoon lemon juice
1/2 teaspoon almond extract
1/4 teaspoon salt
1/2 cup white sugar
1/2 cup brown sugar
1/2 teaspoon cinnamon
- Line a 9-in. pie plate with bottom crust. Trim pastry to 1 in. beyond edge of pie plate; set aside.
- In a large bowl, combine the peaches & apples, lemon juice and extract. Add sugar, cinnamon and salt; toss gently. Let stand for 15 minutes.
- Pour into crust; dot with butter. Roll out remaining pastry; make a lattice crust. Seal and flute edges.
- Cover edges loosely with foil. Bake at 425° for 20 minutes. Remove foil; bake 20-30 minutes longer or until crust is golden brown and filling is bubbly. Cool on a wire rack. Yield: 6-8 servings.
