Best Easy Crockpot Red Beans and Rice

Happy Friday my friends! As we slowly exit summer and head into fall I’ve been finding myself wanting to spend less time in the kitchen and reaching for my crockpot. A few of my go to recipes like Soup & Chili are ones that I go to a lot but red beans and rice is one that I wanted to give a try. This recipe for red beans and rice is super easy to make and since its just Chris and I we had another dinner and lunch leftover.

 Red Beans and Rice


  • 1/2 medium onion diced
  • 1 bell pepper diced
  • 3 celery stalks chopped
  • 3 cloves garlic minced
  • 1 pound ¼ chicken andouille sausage cut into thin slices
  • 1 pound dry red kidney beans
  • 1 tsp salt or more to taste
  • 1/2 tsp black pepper
  • 1/2 tsp Knorr Granulated Bouillon, Tomato Chicken
  • 1 tsp hot sauce I used Franks Red Hot
  • 1 tsp fresh thyme
  • 2 leaves bay
  • 5 cups water
  • 2-4 cups of cooked rice


  1. Rinse the kidney beans and drain.
  2. Add all the ingredients (except the rice) to the crockpot.
  3. Set the slow cooker to low and cook for  6 hours on high
  4. Cook the rice in a separate pot, according to package directions. I used white jasmine rice and cooked it in my rice cooker.
  5. Serve with 1 cup rice in each serving.

Leftover Dinner Option

If you have leftovers of the red beans and rice and are looking for another way to eat this dish sometimes all it takes in one ingredient. We enjoyed this dish with a fried egg on top and bit of extra hot sauce and it was delicious!
