I’d first like to start off my saying THANK YOU! You (yes you!) make these posts come to live! With every comment, DM and email I get from you suggesting what you would like to see on Simply Sutter. Every Suggestion get’s written down in my notebook and honestly it makes my day when I get to create content that you love and I love as well! Today I’m chatting about my favorite simple lunches that are easy to recreate. I hope you enjoy and keep those suggestions coming!
As a girl who spends a majority of her time in front of the computer, creating content, running errands for projects and having another job as an occupational therapist time is something I have to plan. I actually schedule my lunch at a certain time everyday but sometimes it get pushed around because of last minute things. No matter what though eating and cooking is something I enjoy doing, which is why I have a few simple lunches that I can make. Let’s face it girl’s got to eat and while I would love to have ice cream as my breakfast, lunch and dinner I have to eat real food lol.
Quinoa Brown Rice Bowls:
These are my favorite I eat them a lot in different variations. I love that I can either make them with chicken meatballs or tuna.
Chicken Bowl
– 3-4 Chicken Meatballs
– Instant Quinoa/brown rice mix
– 1/2 avocado sliced
– 3 TBL spoons of salsa
Tuna Bowl
– Instant quinoa/brown rice
– Tuna ( I like the pre-made packets)
– 1/2 acocado sliced
– 1/2 cup cherry tomatoes
– 1 TBL spoon lemon juice
Black Bean Kale Salad
– 1 can black beans drained
– 1 cup quinoa cooked
– 1 cup corn cooked
– 1/2 red onion diced
– 1/4 cup chopped cilantro
* keep this made separately to add salad
– Add chopped kale with the already made above toppings
– Add to your liking amount of avocado ranch
