While I have 2 other fun recipes that I am wanting to try with these lovelies I opted to making
Huevos Rancheros. They were super easy to make another great thing about this recipe is that you can get creative with the ingredients you decide to use and while chose to make this for dinner you can make it for breakfast or brunch (best meal of the day)
I am all about easy meals and since it is still in the 100’s here in AZ I don’t really want to be in the kitchen for too long .

Serves: 2
Ingredients:
4-5 eggs
4 small corn tortillas
8 oz can of organic pinto beans (drained )
1/2 diced onion
1 cup of salsa
1 diced tomato
olive oil
salt and pepper
shredded cheese
cilantro
Instructions:
1. Preheat oven 400F. In an oiled pan onions saute for about 5 minutes then add pinto beans and any other veggies and S&P until they are cooked through ( In this case I added my salsa and tomato )
2. Lightly oil the skillets wit olive oil ( also coat the edges ) place either 1 4×6 tortilla on the skillet or 2 smaller ones like I used overlapping them a little. Oil the tops of the tortillas. Divide your bean and onion mixture in half and add to the pans. Now with a spoon make 1-3 small round indents (this is where your eggs are going to go ) Crack your egg into the little indents. Sprinkle eggs with S&P and shredded cheese.
3. Finally add skillets to the 400F preheated oven for about 12 Minutes. When you see the eggs whites turn white and the yolks are done to your likeness go ahead and take them out garnish with cilantro and your done!
4. *Bonus Recipe* Chipotle Sour Cream
Ingredients:
sour cream and siracha
Instructions:
Combine 3 Table Spoons Sour Cream and 3 tea spoons Siracha. Mix
Add mixture to the inside corner of a small plastic bag cut tip off and zig zag through the top your dish !
(Don’t be afraid to go fancy with your design)
