During the spring I really like to make lighter desserts. This cake that I’m sharing with you today is simple and delish ! It even goes great with your morning tea if you need a reason to eat cake for breakfast this is ! Or if you need something that everyone will enjoy at Easter dinner ! Its perfect!
1 Cup Flour
1 Cup Sugar
1/2 Cup Extra Virgin Olive Oil
2 Lemons (Juice) 1 for Zest
1/2 tsp Baking Powder
1/4 tsp salt
Powder Sugar for Top
Pre heat oven 350 degrees
Butter and flour 9″ pan (I used a heart shaped pan)
In a kitchen aid blend eggs and sugar on high speed for 5min. (till thick and fluffy)
Slowly pour in EVOO & lemon juice in to the wet batter (fold with spatual )
In a seperate bowl combine flour, baking soda & salt (mix)
Gently add dry ingredients into wet ingredients (fold again with spatual )
Pour into prepared pan and bake for 45min.
(make sure you let the cake cool before transfering it )
Add the powdered sugar and your all done !
